The two main types of pork ribs are spare ribs and baby back ribs. Spare ribs are larger and meatier and contain more fat and cartilage than baby back ribs. When spare ribs are trimmed they are sometimes called St Louis ribs. Slow cooked on a bbq or smoker or baked in an oven, well-cooked ribs should fall of the bone. Sticky bbq sauce is a favourite for this meat.
